Quick pickles are the perfect garnish for our gluten free baos because they provide a tangy crunch to your fillings. Best of all, they only take 10 minutes to make, so you can prepare these while making the rest of your bao!

Level: Easy

Time: 15 minutes

Yield: 10 servings

Ingredients:

  • 2 small seedless cucumbers (such as kirby) or 1 large
  • 1 tablespoon sugar
  • 1 teaspoon kosher salt

Directions:

  • Using a mandolin, cut the cucumbers into 1/8 inch slices.
  • In a bowl, mix the cucumber slices with 1 tablespoon sugar and 1 teaspoon kosher salt and let sit for 10 minutes.
  • Serve immediately, or refrigerate in an airtight container for up to a week.
