In honor of Saint Patrick's Day, we present Luck of the Bao! This take on Irish Beef and Guiness stew uses gluten free stout and is served in our gluten free baos!

Yield: 6 servings

Ingredients:

  • 12 Gluten Free Bao Company buns
  • 2 slices bacon
  • 1 pounds boneless beef chuck, cut into 2 inch cubes
  • 1 onions, chopped
  • 2 cloves garlic, minced
  • 1/2 can gluten free stout beer
  • 2 tablespoons tomato paste
  • 2 carrots, cut into 1-inch pieces
  • 1 rib celery, cut into 1/2-inch pieces
  • 2 sprigs fresh thyme
  • 1 cups chicken broth
  • 1 teaspoon white sugar
  • salt
  • black pepper

Directions:

  • Chop bacon into pieces and cook in a heavy skillet over medium-high heat until crisp, 3 to 4 minutes. Turn off the heat and transfer bacon into a large stew pot, reserving bacon fat in the skillet.
  • Season beef cubes with 1/2 teaspoon salt and 1/4 teaspoon black pepper. In the skillet with the bacon fat, sear the beef pieces over high heat until browned all over, about 5 minutes. Place beef in the stew pot with bacon, leaving fat in the skillet.
  • Turn heat down to medium; add onions to the reserved fat and cook until lightly browned, stirring occasionally. Season with a pinch of salt.
  • Add garlic to the onions and cook until soft, about 1 minute. Pour gluten free stout into the skillet and stir with a wooden spoon, scraping the pan to pick up any browned bits.
  • Pour the contents of the skillet into the stew pot. Add tomato paste, carrots, celery, thyme, sugar, 1/4 teaspoon black pepper, and chicken broth.
  • Bring stew to a simmer, stirring occasionally. Reduce heat to low and cover pot.
  • Simmer stew until beef is fork-tender, about 2 hours, stirring occasionally.
  • After 2 hours, remove cover and raise heat to medium-high. Bring stew to a low boil and cook until stew has slightly thickened, 15 to 20 minutes. Remove thyme sprigs and add salt and pepper to taste.
  • Steam Gluten Free Bao Company buns per instructions on package.
  • Spoon the stew into the buns and enjoy!
